The Tiramisu recipe to end all Tiramisu recipes!!!

My other half, partner in crime, the Robin to my Batman or whatever we like to call each other, absolutely LOVES Tiramisu. Almost as much as I love chocolate, which is an awful lot I can tell you.   With my love of baking and developing new experimental ways of cooking and with Guy always ready and willing to be the food crash test dummy, I get to work creating new and exciting meals, cakes and desserts with every ingredient I can put my hands on.

One of the most popular dishes and one to give you a little wake up after an evening meal is the traditional classic, created by my Italian ancestors, Tiramisu. I have added a slight twist to the traditional recipe and you can make this with or without the alcohol. Enjoy!

Ingredients.

550ml    Double cream
250g      Mascarpone - (that famous cheese that hides a baby horse i hear you say) ;)
1 tsp      Nutmeg
5 tbsp    Soft brown sugar
1 x        Pack sponge fingers
300ml   Strong coffee (made with 2 x tbsp coffee)
or
300ml   Espresso martini (this can be purchased pre made from Marks & Spencer)
35g       Dark chocolate

Method

Put the cream, mascarpone, sugar & nutmeg into a large bowl and whisk throughly, a strong arm is needed for this as it does get a little tough near the end but keep persevering until you have a thick creamy consistency.

Get your serving dish ready. Onto a shallow dish or plate, pour the coffee/martini. Dip the sponge fingers for a few seconds on each side. Layer into your serving dish as many sponge fingers as it takes to fill the bottom with one even layer. Then spread part of the creamy mixture over the top of these ensuring to evenly cover all of your fingers.

Take the dark chocolate and grate an even layer over the top. The amount of chocolate is totally up to you depending on how chocolatey you like your desserts! Then repeat this process until you have filled up your serving dish and used up all the ingredients. You should finish with the cream layer on top and lots of that beautifully delectable grated dark chocolate. Cover and chill for at least a few hours, overnight or until a certain someone raids the fridge, like a hungry lion who makes out he hasn't eaten for days, looking for his favourite dessert.

Your Tiramisu will last up to two days in the fridge and this recipe should serve up to 4 people.
